Bikini Recipe

Yields 10 people

For the Citrus Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar

To make the Premix (yields 850ml, enough for 10)

400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish

Directions

Making the Cordial: Put the listed ingredients in a pan, heat until it reaches a gentle boil, mixing until the sugar dissolves. Next, take off the stove and leave to reach room temperature entirely. Decant to a sterilised bottle, seal and refrigerate it in the fridge, it will last for around four weeks.

Preparing the Batch Mix: Mix all the liquids into one sizeable container, allow it to infuse for one hour, then strain , ideally through cheesecloth, making it fully clarified.

For serving: Measure 85ml of the premix into your cocktail shaker packed with ice, gently stirring lightly for a minute to cool it down. Strain into a chilled martini glass or similar, garnish with a few cranberries and complete it with a quick spritz of mandarin oil over the drink.
